Kare` as the J-Kats call it… is the sum of all spice-experience the Japanese have ever had. Super popular on rice, with noodles or mopping up the damage with bread.
When I lived in Japan 2003 – 2006, there here was little place down the end of the main street that made the best curry udon. You had to wear a paper-bib because the slippery splash of a falling noodle would drench you in a hot second. Their bowl was my go-to hangover comfort food. Our curry udon bowl has evolved over the years but it’s strangely still an easy go-to dish when you need a full stomach & a gentle soul scratch.
