This is in fact a take on the classic ‘Kitsune Udon’ dish in Japan that we used to eat at a standing udon counter called a ‘tachinomiya’. It kind of loosley translates to ‘Fox looking at the Moon’. The sweet tofu is similar to the one used in inari sushi, that sweet brown tofu skin you’ve probably had wrapped around rice, that’s the kitsune fox colour. The poached egg is the moon. When you assemble them into the dish you always have the kitsune low and the egg high, fox looking to the moon. That’s how we came to call it Foxy Moon Udon. This dish a vegetarians delight. It carries everything you need to give you a filling meal.

Fried sweet tofu (aburaage), poached egg, wakame & tenkasu (fried rice bubbles) in a hot shitaki dashi broth.
Making notes: we’ve made the concentrated stock for you. You’ll have to boil 300ml water & mix with the stock to make the soup. We think doing this in a separate bowl is a good idea, then pour it over your udon. Good times.
