A classic Japanese dish of eggplant halved, scored, soaked, dried, fried & brushed with sweet & savoury miso glaze called Saikyo. Saikyo is used in many Japanese glazed dishes like Tofu or Konnyaku. Saikyo sauce is a thick miso sugar mirin mix slowly heated & tempered together, brushed onto food which is later baked or grilled. Nasu Dengaku literally means eggplant grilled over fire. We use a blow torch Rambo-style to melt this miso magic.
