A very simple dish, thinly shaved beef caramelised & added as a toping to our shitake dashi broth, tenkasu, spring onion a plenty (negi)… this dish is a hug for your soul… your deep inner consciousness will give you good dreams after this bowl of udon.

Making notes: we’ve made the concentrated stock for you. You’ll have to boil 300ml water & mix with the stock to make the soup. We think doing this in a separate bowl is a good idea, then pour it over your udon. Good times.
