Niku in Japanese means meat. The beef is added as a topping to Udon & is kind of between Sukiyaki & Shigureni. Soy sauce & sugar make up the base ingredient for the slow reduced beef. The flavour of this dish changes as you demolish the bowl. It’s quite different from the first taste to the last glorious mouthful.

A very simple dish, thinly shaved beef caramelised & added as a toping to our shitake dashi broth, tenkasu, spring onion a plenty (negi)… this dish is a hug for your soul… your deep inner consciousness will give you good dreams after this bowl of udon.
Making notes: we’ve made the concentrated stock for you. You’ll have to boil 300ml water & mix with the stock to make the soup. We think doing this in a separate bowl is a good idea, then pour it over your udon. Good times.
