A good time to clear things up… Karaage is the process of marinating various foods, usually chicken & sometimes other meat & fish, then coating them in potato or corn starch & deep frying in light oil. This is different from Tempura which is not marinated but instead coated in batter & lightly fried, often tempura is tossed & flipped while frying to give it that light fluffy texture. Karaage is usually served with a wedge of lemon & Japanese Mayo.

Home-made karaage (kara:ah:geh), soy sake garlic ginger marinated chicken dusted in potato starch & lightly fried, then coated in our sticky leek sauce, pickled vegetables, mixed grain rice & a miso soup on the side. Remember to boil the kettle to add water to your miso cup when it arrives.
