We buy our salmon fresh from our suppliers every morning to second morning, it begins its journey into sashimi or your bento as soon as we receive it. We order in small quantities often, so we have close to absolute zero wastage. Anything off-cut goes into stocks or staff meals (makanai meals).
Teriyaki Salmon Bento
Shouldn’t need too much description, pan fried salmon in a sticky & sweet teriyaki sauce, laying pool side with its pickled vegetable friend & a miso soup on the side. Remember to boil the kettle to add water to your miso cup when it arrives.
